Incredibly Soft Cinnamon Rolls

These incredibly soft cinnamon rolls feature a luscious buttery cinnamon filling and a delectable cream cheese icing – they are simply delightful!  Be warned, you might find yourself tempted to devour the entire batch!

Ingredients

Dough

  •  teaspoon active dry yeast (or instant yeast)
  • 1 cup milk (lukewarm)
  • ½ cup granulated sugar
  •  cup butter (unsalted, softened, or margarine)
  • teaspoon salt
  • eggs
  • 4 cups all-purpose flour

Filling

  • 1 cup brown sugar (packed)
  • 3 tablespoons cinnamon (ground)
  •  cup butter (unsalted, softened)

Cream cheese icing

  • 6 tablespoons butter (unsalted, softened, or margarine)
  •  cups powdered sugar 
  • ¼ cup cream cheese (at room temperature)
  • ½ teaspoon vanilla extract
  •  teaspoon salt

Instructions

  1. To prepare the rolls, begin by dissolving the yeast in warm milk, adding a teaspoon of sugar taken from the half cup required for the recipe. Combine these in a large bowl and allow to rest for about five minutes. If the yeast is active, it will begin to froth.
  2. Into your mixer's bowl, add the sugar, butter, salt, eggs, and flour. Then, add the yeast mixture and mix thoroughly until the dough is well incorporated and pulls away cleanly from the sides of the bowl.
  3. Put the dough in an oiled bowl, cover it, and allow it to rise in a warm spot for about an hour or until it has doubled in size.    
  4. Grease a 9x13-inch baking dish with cooking spray or butter. In a bowl, mix together the brown sugar and cinnamon.
  5. Roll out the dough on a lightly floured surface to an approximate size of 16 inches in length and 12 inches in width, with a thickness of about ¼ inch. Evenly spread ⅓ cup of butter over the dough, then uniformly sprinkle the sugar on top. Starting from the long edge, carefully roll the dough towards the opposite edge, ensuring it's tight. When completed, it should resemble a lengthy log.
  6. Slice the roll into pieces that are 1½ inches thick and arrange them in a baking pan that has been lightly greased.
  7. Place the sliced rolls into the prepared pan. Cover them with a clean kitchen towel or plastic wrap and allow them to rise for an additional 30 minutes, or until they have doubled in size.  
  8. Preheat oven to 350°F. 
  9. Insert the baking pan into the oven and bake for 20 minutes, or until it turns golden brown. 
  10. While the rolls are in the oven, prepare the icing by combining all the ingredients and beating them with an electric mixer until the mixture is fluffy and smooth.
  11. After the rolls have finished baking, generously spread the icing on them.
